Even in Nepal, high in the mountains, you can get fast food. Samosa (or Singoda in Nepal) is served on almost every street corner at any time of the day.
The baker in Tansen, Bhanu Argeja, makes a batch each day. He starts by scratch by making dough. Then he rolls out each individual pastry.
The filling is made of spiced potatoes, onions, peas, and lentils – which is spooned into dough-rolled triangles. Finally, each Samosa is sealed up with a squeeze and placed into the oil at room temperature. They’ll turn a golden brown as the oil heats up.
